Pinot Noir

Pinot Noir is a variety of black wine grape that comes from the French words “pine” and “black.” These dark grapes are grown mostly in France’s Burgundy region, but it is also grown all over Europe, and in parts of South America, Canada, and the United States, and Pinot Noir vines thrive in cooler weather. The variety is especially sensitive to wind, frost and diseases. Although it is considered as a variety that produces the finest wines in the world, this variety is difficult to grow and cultivate. Pinot Noir wines are popular, with black and red cherry aromas, currant notes, and berry flavors. Depending on the growing conditions, Pinot Noir wines can also produce earthy tones, tomato aromas, or a wood-like flavor. The variety is also used to create Champagne, rose wines, and vin gris wines. The versatility that this wine has when pairing with food makes it very popular. It is one of the lightest red wines in its class. Pinot Noir is an excellent companion to various poultry dishes such as chicken, pork, ham, duck, or goose. But it was more than just the scenic beauty of this valley that had caught his eye situated in the lee of the majestic Kasteelberg, the winters were mild, the summers were hot and the soil was uncommonly fertile. What's more, ships spotted from the lookout point on Kasteelberg were just a day away from Cape Town, and so were the wagons that went to meet them, laden with the treasures of the Riebeek Valley. The little house is affectionately named Chateau Laura. About the Vineyard The tiny parcel where Le Paradis is grown was planted in 2011 with Dijon 667 Clones over two acres. Wine Production The grapes from this small parcel were elaborated in 15 separate microvinifications. All the microvinifications were fermented with indigenous yeast. 20% of the microvinifications were fermented with 100% whole clusters in oak roll-fermentor of 600L and low temp (22 Celcius degrees). 40% were fermented with 20% whole cluster in small vats of 800L and 40% fermented in small vats of 800L without sulfites until 4%VV of alcohol. BACKGROUNDIn 1834 the Boizel House was established in pernay, the heart of Champagne, by a family passionate about the wines of its region. Intimate knowledge of the Champagne region, passed on through the generations, and access to grapes from the finest cru sites, are the essential elements behind the Boizels' elegant portfolio. Working with Chardonnay and Pinot Noir sourced only from Champagne's most coveted Grands and Premiers Crus blended with the best crus of Pinot Meunier, Boizel's intimate knowledge of each village and hillside coupled with longstanding grower relationships allows them the ability to select the finest quality grapes for their Champagnes.TERROIR VINTAGE NOTESPinot Noir and Chardonnay grapes for the production of the Grand Vintage wines are sourced from Grands and Premiers Cru vineyards within the villages of La Montagne de Reims (Pinot Noir) and the Cte des Blancs (Chardonnay). Pinot Meunier is sourced from the best sites within the Valle de la Marne.All wines are aged sur lie in Boizel's historic chalk cellars beneath the Avenue de Champagne for a minimum of 3 years, climbing to 15 years and above for the best vintages. WINEMAKING AGEINGA unique expression of the vintage, the Grand Vintage is only produced in the best years. This cuve is a blend of 50% Chardonnay from the Cte des Blancs (Mesnil sur Oger, Oger, Avize, Vertus) and 50% Pinot Noir from the Montagne de Reims (Mailly, Bisseuil, Chigny les Roses).The wine was aged 8 months in stainless steel vats. Post second fermentation, the wine was aged for 8 years on its lees. TASTING NOTESDue to the long lees aging, almond, frangipane, candied orange and brioche aromas are rich and balanced. The palate is complex and mature, with the silky perlage supplying acidity and lift. Elegant pastry notes rounds out the finish. We saw a sudden spike in temperatures just prior to harvest, leading fruit to ripen quicker than anticipated. This sped up our harvest schedule, but due to our team's vigilance, the fruit was still able to be picked at optimal ripeness. Temperatures then cooled back down by mid-September, allowing the remaining vineyards to complete ripening at an ideal pace. The rest of harvest was finished as planned, with yields coming in at their typical levels. VINEYARD NOTES: The historical Edmeades Vineyard sits along the western side of the small town of Philo in what's known as the deep-end of Anderson Valley. Flanked by the Navarro River, there is a ersity of sandstone soils throughout the vineyard. The Edmeades vineyard is planted with vines facing southwest, allowing this vineyard to receive warmer afternoon weather. This helps to balance the prolonged cool fog influence this vineyard sees throughout the growing season.WINE PROFILE: Aromas: Raspberry, dried cherries, pennyroyal, orange zest. Held in an elegant bottle inspired by King Henri IV, it has been widely acknowledged for its consistent high quality for more than 40 years, and it is the benchmark for ros champagne around the world. By now, everyone knows that the Willamette Valley is an amazing place to grow Pinot Noir. When I relocated from Napa Valley to partner up with Force Majeure Vineyards, I knew I also wanted to start a project where I could focus attention on a varietal and growing region that I loved. Part of the excitement of being in the Pacific Northwest is the ability to have access to so many amazing vineyards and so much ersity, along with the opportunity to push boundaries and try new things something that is becoming increasingly difficult in other growing regions. We partner up with a few very small, erse and amazing vineyards in the Willamette Valley, sourcing fruit from these dry-farmed sites that emphasize low yields, sustainable practices and produce outstanding fruit.The wines are crafted in the same way I have been making wine since I was carrying it out at Bryant Family Vineyard in the Napa Valley utilizing very low-impact, non-industrial techniques, native yeasts, little extraction and little new oak, and never filtering or fining. This allows a real sense of place to show through in the wines that is often dimmed when too much manipulation is undertaken.Our first vintage was 2015, and was released in early 2017. As production is currently extremely small, the best way to get the wines into your hands is to join our mailing list at the Mailing List link above to receive an allocation when we have a release. Pair with veal filet mignon, squab, beef steak and roast duckling. titleView Tim Atkin score and notes (may require login) targetblank relnoopenera Review: I really like this terroir and the 2021 is an absolutely classic example of this fine premier cru, offering up a refined and pure bouquet of black plums, dark berries, coffee bean, a complex base of dark soil tones, a nice touch of new oak and plenty of upper register smokiness. On the palate the wine is pure, full-bodied and very elegant in profile, with a superb core, lovely soil signature, ripe, suave tannins and a long, vibrant and complex finish. Fine, fine juice. 2033-2080. 93 - John Gilman, View from the Cellar 102 Tim Atkin

//cdn.shopify.com/s/files/1/0741/4677/5087/files/volnayfermtbl_9717f57f-7370-48ab-8083-2647e2bb3e0d.jpg?v=1771490445
florence-cholet-auxey-duresses-rouge-2020
Florence Cholet Auxey-Duresses Rouge 2020

Florence Cholet Auxey-Duresses Rouge is made from 100 Pinot Noir 60 year old vines.Auxey-Duresses exhibits intense and juicy aromas of cherries, raspberries, and spices.
