The other 20% are in Cordon de Royat, which allows to control the vigor of the young vines. \u003cbr\u003eDepending on the weather condition, the maturity and the quantity of the grapes, Vincent is also using \"vendange verte\" (green harvest), which consists in cutting the bunch of grapes, one month before harvest, so that the concentration of the sugar in the grapes is higher. The harvest is done by hand and automatically selected for a second time in the cellars.  The grapes are destemmed and aged in 1 third new oak, the rest in 1-2 year old barrels. Each \u003cem\u003eterroir\u003c\/em\u003e is respected and vinified to show its character.
