Both Escudero's old winery and the new Valsacro facility are in Rioja Baja (southern part), bordering the province of Navarra in an area where DOCa Rioja and DO Navarra territory run together. Over the last 20 years or so, Amador has worked as consulting winemaker in a number of Navarra co-ops. This allowed him to identify a series particularly promising of old vines plantings in the area. Once the Valsacro project was up and running and the new winery in production, he decided to launch the Navarra project. Cabernet is not an accepted variety in Rioja, but some 25 years ago, Navarra authorized the use of this \"foreign\" grape. This makes these among the oldest Cabernet plantings in the area. \u003cbr\u003eTo comply with DO Navarra regulations, the wines must be made grapes grown in Navarra, and be produced, aged and bottled there as well. The selection and vinification was done at the Monteagudo co-op and the ageing done in the cellars of an older winery across the street which had been unused for some time.
