Domaine de la Mordoree (woodcock), located in the town of Tavel, in the Southern Rhone Valley, is the most consistent producer of top quality wine in my entire selection. In 1986, the brothers Christophe and Fabrice Delorme decided to dedicate themselves to their passion for wine. It pushes the boundaries of what ros is and can be, getting closer to a light red than a traditional ros, which may be where Tavel fits best anyway. It shows a translucent ruby hue and offers complex yet still reserved aromatics of red cherries, sappy garrigue, spicy nuances, and a touch of oak that's beautifully integrated. This carries to a medium-bodied, almost medium to full-bodied ros with a pure, layered, elegant mouthfeel, integrated acidity, and flawless overall balance. Despite being raised entirely in wood, this is one of those rare high-end ross that brings greater richness, depth, and complexity while still staying light in feel, balanced, clean, and crisp.
