Unoaked Chardonnay.
Bright yellow color with green highlights.
Mineral and minty notes on the nose, ample in the mouth with floral and delicate fruit flavors. Mineral, sharp and intense.
Produced from a 1.6 hectare single vineyard that enjoys an eastern exposure, resulting in gold color grapes that best express the terroir. Average age of the vines is 48 years.
Careful vinification. Minimal intervention in the vinification process. Modern equipment (pneumatic press, thermo-regulated tanks). Each parcel is harvested at full maturity. Destemming, slow press, slow fermentation, egg white fining, malolactic fermentation, aging on the lees.
Pairs well with scallops, grilled fish.
Review:
"(done entirely in cuve): Bright medium yellow. Pungent, musky, reduced aromas of lemon, crushed stone and caraway seed. Tactile, concentrated and quite dry, with its penetrating acidity supported by strong buffering extract. An energetic, structured Saint-Véran with noteworthy rising length. This is not as easy to drink as the Rochats but is a more serious main-course style of white wine that should be paired with more complex dishes.- Stephen Tanzer"
