Domaine Thierry Mortet Bourgogne Aligote is made from 25 years old Aligot vines

Manual harvest with a selection of the grapes Fermentation with controlled temperature between 18 and 22 degrees celcius.
Ageing on the lees and malolactic fermentation in stainless steel tanks. Then after the racking, the wine is fined used bentonite or caseine, before bottling. Usually the ageing process takes around 8 to 10 months.
The wine is fresh and fruity with loads of grapefruit aromas, fresh green apple, tons of citrus in the palate as well, giving the wine a very friendly freshness.
